Menu Plan: Week Aug 13th

Not much to report around here. Work work work. Oh, and beautiful weather. This week we’ll be having easy, 30 minute meals because I don’t have much time to cook, but still want yummy, home-cooked meals.

In the garden: Eggplant, basil, green beans, lemon cucumber, japanese cucumber, zucchini.

In the fridge: Pepper jack, parmesan, soup stock, yellow squash, brats from UCD meatlab.

In the pantry: Orzo

Saturday- Squash and green bean risotto with cucumber salad.

Sunday-Grilled Ale-braised brats and spicy eggplant/squash skewers.

Monday-Birthday dinner! Jonathon is taking me to our to Japanese food.

Tuesday-Turkey, avocado wraps with chipotle soy mayo.

Wednesday-Bean burritos.

Thursday-Pork chops, lemon herb-butter orzo, and garden vegetable.

Friday-Going away party for friend/lab manager. I am not sure what I’m going to make yet, but my guess is it will feature squash.
