Pimiento Mac ‘n Cheese

Nom nom nom.

A month or two ago, Bon Appetit Magazine featured pimiento mac n’ cheese. I love peppers, I love cheese, and I am supposed to be carb loading for long runs. Oh, and the picture looked amazing. I had to try it.

Yes, it was amazing. If you like peppers and cheese, try it. Enough said.

The mac is relatively simple to make. Simmer a bell pepper and garlic until tender.

Meanwhile, toast up some panko.

Pour peppers in blender with cheese. At this point, your kitchen will start to smell amazing.

Pour the sauce over pasta and add some more cheese.

Top with toasted bread crumbs and bake until bubbly.
