It all started with a roasted chicken. Trying to get the most of my $15 dollars, I decided to make soup from the leftovers and the contents of my latest CSA box.
The chicken bones and some meat was cooked overnight with an onion, a few carrots, garlic, and salt. The odd bits were filtered out and I was left with a lovely clear dark broth. 
The broth was heated and combined with an onion and three medium carrots which had been sauted over medium heat until slightly tender.
Leeks were chopped and thrown in the pot. As were three peeled potatoes.
More broth was added and the soup was simmered until the potatoes were tender. A cup of shredded chicken was thrown in with a large handful of chopped chard. Seasoning (salt, pepper, thyme, red pepper) was added and the soup was served with freshmade garlic bread.
This is the perfect autumn meal-warm and comforting; fresh, in season veges…
