Salad. I eat them almost daily as a side. And at least once a week J and I have what we call a “big salad”. Salads can be boring. They leave you feeling satisfied that you ate a healthy meal, but then your stomach starts to grumble 30 minutes later. Here are some ideas for main courses that are both filling and a bit more creative than just plain old lettuce and a cucumber.
Cesar salad with leftover BBQ chicken and garlic bread:
Mediterranean Inspired: Tabbouleh (bulgar, carrots, parsley, green onions, cucumber, heirloom tomatoes, feta, olive oil, lemon juice, salt, pepper) with roasted zucchini: (the leftovers taste just as good!)
Southwestern style: Chipotle chicken (sauce from chipotle in adobo, bbq sauce, lime juice, black pepper), corn, black beans, tomatoes, red pepper, avocado, scallions topped with ranch. (These pictures are VERY bad. Sorry!)
Mixed greens with honey mustard shrimp (dijon mustard, lemon, honey, olive oil, salt, pepper), mango, manderines, avocado. Top with honey-mustard dressing (mustard, honey, olive oil, red wine vinegar)
